About The Collaboration

For more than 155 years, Guittard Chocolate Company has been woven into the fabric of Northern California’s food culture. Founded during the Gold Rush and still family-owned and operated today, Guittard is the oldest continuously run, family-owned chocolate maker in America. Through five generations, the Guittard family has preserved time-honored methods while continuing to innovate for the next generation of chefs and chocolatiers. Their expertise, earned over a century and a half, shapes every bar, chip, and couverture — the quiet craft behind some of the world’s best pastry kitchens.

That deep respect for process and provenance is what connects Guittard with Octavia, Chef Melissa Perello’s acclaimed neighborhood restaurant in San Francisco. In Octavia’s pastry kitchen, Pastry Chef Melissa Loar translates that same dedication to craft into her weekend pop-up, Saturbake — a gathering place for pastry lovers that feels both refined and familiar. The collaboration between Guittard and Octavia feels almost inevitable: two Bay Area originals who share a belief that excellence lives in the details and that the best work happens when it’s done with care.

On December 13, Octavia will open its pastry door for a special Guittard takeover of its beloved weekend Saturbake — a one-day holiday celebration of chocolate and craft. Every pastry on Pastry Chef Melissa Loar’s menu features chocolate from Guittard’s prestigious library of products, spanning couvertures, cocoa powders, chips, and wafers. The result is a showcase of how Guittard’s ingredients, trusted by pastry chefs for generations, can inspire creativity at every level of the craft. Lady Falcon Coffee Club, another Bay Area original, will join to serve Guittard hot chocolate and specialty coffee drinks, rounding out a morning designed to bring warmth — and a touch of celebration — to the neighborhood.
